Wow i’ve pretty much fallen off the planet! My sewing machine has been collecting dust, i’ve purged craft supplies of all kinds, I’m just not in a creative season. We are in a busy season as most are during summer but i’m also just in a season where most of my time is spent working or reading or doing bible study or prepping for a 5k. I’ve finished my christmas gifts except for my husband but we went with bought gifts this year it was just easier. (The only redeeming factor is we did our best to buy from brands that give in some way). That all being said the fall is upon us in 2 days!!! So since i’m busy at bible study, and leadership training, and going on camping trips my creativity has gone to the kitchen! I wanted to share a few of the recipes i’ve been trying out lately some better then others all thanks to pinterest! (if you don’t know I’m a pinterest-a-holic then you don’t know me!) Now please note most of these are fallish recipes and even though its been a hot hot hot few weeks i started in with my first fall recipe mid august. 🙂
Ok now before you scroll for those recipes i just want to say that today i baked a pumpkin apple pie all of my own recipe creativity i plan to share it so check in hopefully tomorrow it will take me a bit to type up the recipe. Ok now onto the pinterest ones……
Apple sauce bars
Apple Enchiladas (now note i don’t use the apple pie filling they suggest i found another recipe i prefer that you mix fresh apple slices with 1 box vanilla pudding mix, 4tbl water, and some cinnamon)
Cookie dough bites

Ahhhh apple picking season comes with fall!!! I made our regular apple bundles but i’ve also whipped up some of the best apple sauce i’ve made yet!!!!
check it out so easy!!!! i didn’t have a cinnamon stick so i used just seasoning.
and lastly my son helped me make these cookies. he liked them as did my husband and me the pumpkin lover wasn’t super impressed!

I love cooked apples and lucky for me its the fall so the recipes are in abundance. But i decided to invent my own the other day and it was yummy. I warn you not really healthy and really much more of a dessert but i didn’t care and neither should you! You should just make and it and enjoy it!
Here is my recipe:
1 pizza crust. (i used 1/2 the tube of pillsbury pizza dough)
cinnamon and sugar
lemonade, citrus soda (7-up, sprite), orange juice, or apple cider
1) Spread out dough on a greased cookie sheet or pizza stone. stab with fork and let sit for a few min
2) Wash, peel, core, and chop or slice apples
3) Pour a cap full- 1/4 cup of your liquid of choice. ( I totally eyed this you want just enough to cover the dough in a thin layer not drench the dough so its pooling or running off your stone)
4) Spread out apples ontop of dough
5) Sprinkle with cinnamon and sugar to taste
6) Bake at 350 for 20 min or until dough is cooked.
7) Slice and enjoy!
This is basically my apple dumpling recipe, which is done by wrapping the apple pieces in crescent rolls instead of spreading them out on top of the dough.
I’ve been busy cooking but let me tell you the recipes have been so good they get eaten before i realize i didn’t take a photo of them. 😦 probably for the better though as my iphoto doesn’t seem to be working properly.
Anyway yes i’ve been cooking, we had meals brought to us for a few weeks, thats over now and I am back to cooking pretty much full time. I am sticking so far with quick and easy recipes i find on pinterest (i do plan to get back to cooking through my cookbooks, a goal i started this time time last year).
I’ve made some zucchini muffins that my kids loved!!!
Some Pumpking pudding or crustless pumpkin pie. Its made in the corckpot, it was easy, smelled amazing, and tasted just as good!
On Halloween i made a hot cocoa cake in my crock pot. again AMAZING!
Did you notice how much use my crock-pot is getting? That is becaused i pinned this awesome post with a ton of good desserts to make in it. There are a few more on the schedule for the upcoming weeks. Check it out and i’ll report back soon on a the rest i plan to cook!

I don’t think this really constitutes as cooking, but lately my “meals” aren’t really meals at all anyway. I don’t have a big appetite to begin with but certainly when I’m prego it’s even worse! Lately I haven’t been eating much but I’ve been craving certain things like eggs, so here is my latest quick and easy recipe for all of you…..
Asparagus Omelet, its simple just chop up your asparagus and mix it with your eggs pour into a pan and let it cook just like you would any other omelet! Oh so good! My kids even love it!!!
I saw this great idea on Pinterestto make Lasagna in a muffin tin using wonton wrappers. I love the idea but I’m not a huge fan of meat and red sauce Lasagna so I decided to make my own version so here it is….
1 Yam (Yes I know I said sweet potato, feel free to use one I just grew up calling Yams Sweet potatoes)
1 16 oz ricotta
1 pkg Wonton wrappers
16oz Mozzarella Cheese
1) wash, peel and grate your yam.
2) put it in a fry pan on the stove to get it soft
3) Combine Ricotta, Egg, salt, Yam, Parmesean and Mozzerella cheese to taste
4) Line your muffin tin with wonton wrappers
5) Fill each wrapper in this order… Cheese/Yam filling, Sauce, Wraper, Cheese/Yam Filling, Sauce, Mozzarella Cheese to top
6) Bake @ 375 for Aprox 20 mi (till cheese is melted and wonton looks crispy
7) Remove from oven cool, and use a knife to loosen muffins from tin
We’ve had a lot of success with recipe’s we have been trying via Pinterest, and i wanted to share a few more with you that we didn’t photograph but none the less enjoyed…..
Baked Potatoes in the crock pot (seriously i have never had a baked potato actually turn out until I tried this!)
And the #1 favorite in our house right now… Veggie Muffins!

Oh man you want something so totally delicious and fun? this is the recipe for you to try!!! It reminded me of my favorite crepe from my favorite creperie so i had to try it and boy was it worth it. My Hubby actually made it for me for a special lunch one day, he added the powdered sugar which was probably more sugar then i needed but boy was it delcious! I warn you though 1 is more then enough, its sweet! (But not to sweet, its just perfect sweet!) For the recipe head over here…. and if you try it and alter it in anyway please come back and tell me i’d love to hear your combos!
