Home Cooking: 2005 Annual

Yesterday I shared about recipe’s I’ve been cooking up in my kitchen from Home Cooking’s recipe annual. I even shared a recipe for soft pretzels that would be fun for kids to make. Today I want to share a recipe from the book that me and my little one both loved. Its called Crunch top applesauce bars.

I love the little inscription under the title (each recipe has a note from the submitter), it reads 1940s recipe from  my mother’s cooking notebook. Something about that for me just warms my heart. Its a domestic treasure. i can’t quite explain what it is about it but i love the idea that i’m making a recipe of the past (not a modern one). So here it is….

Doesn’t it look yummy? ok so my sugar got a little clumpy on the top but beyond that, yummy huh?

Ingredients:

1 1/4 cups sugar (divded)

1 cup unsweetened applesauce

1/2 cup shortening

2 cups flour

1 teaspoon baking soda

1 1/2 teaspoons cinnamon

1 teaspoon grated nutmeg

Dash cloves

1/4 teaspoon salt

1 cup raisins (i left these out)

3/4 cup coarsely chopped walnuts (divided) (again i left these out)

1 teaspoon vanilla

2/3 cup cornflakes

2 tablespoons butter or margarine

Directions:

Preheat oven to 350 grease 15 1/2x 10 1/2 x 1inch jelly-roll pan.

In large bowl, combine 1 cup sugar with applesauce. Add shortening; blend.

Sift together flour, bakingsoda,cinnamon, nutmeg, cloves, & salt on a piece of wax paper. Add to applesauce mixture & stir util smooth. stir in raisins, 1/2 cup waluts & vanilla. Spread into jelly-roll pan.

Combine corn flakes, 1/4 cup sugar, 1/4 cup walnuts & butter; sprinkle over top of batter in pan. Bake about 30min or until batter pulls away from sides of pan. Cool & cut into bars. Makes about 32 bars.

    What’s the texture like, chewy like brownies or more like cake or muffins? I’d like to try this. Oh, and I think the clumpy sugar looks great.

    they were soft id say closer to a brownie texture.
